I'm a guy (not a great cook) but I wanted to make plantain portage for my children when they return from school because we had plenty of plantain ripened at same time. I followed your procedure and waoh it came out excellent, colour and taste. Ripe plantain - the darker the plantain the sweeter the porridge, it's that simple. Since yellow plantain has it's own naturally occurring sugar (complex).
Steps to make Portage plantain:
- Wash, peel and cut the plantain into sizes and add water to cook
- Add salt, blended pepper, seasoning and crayfish and continue cooking until the plantain is soft
- Add palm oil and kpomo
- Add your vegetable and sliced onions and cook for 3 minutes
- Serve your plantain with pepper soup or you garnish with chicken as I did
