Cook the aubergines first before placing them on the pizza. Keep them in a salted water for 30 minutes first. Pat them dry, then - either shallow fry them or use an airfryer if you have one.
  8. Remove the pizza from the oven. Place small bites of mozarella cheese all across the pizza and put the tray back into the oven for a further 3 minutes
  9. Once the mozarella cheese has melted a bit, take the tray out to put your topings (cooked aubergine or other cooked vegg) to your liking and place it back into the oven for an other few minutes. We have aubergine and proscutto di parma (half and half) in this photo. We added the parma ham, fresh mozarella and grated parmesan cheese on top after removing the tray from the oven.
