  1. Firstly wash and rinse carrot nicely. Grate the carrot and keep aside.
  2. Take a thick bottom kadhai,add grated carrot and roast for 6 to 8 minutes on low to medium heat.
  3. Then add milk and mix it.Let it cook on low heat to medium heat.
  4. Slowly add gradually milk will start reducing
  5. Stir the halwa mixture in between and scrap from the sides of kadhai,and add the struck part in halwa. Also keep on stirring so that it doesn't stick.
  6. Now when milk is about to be reduced add sugar and mix it well till the sugar has dissolved completely.
  7. After that make a space in center part of the kadhai with the kadchi and add ghee. As the ghee starts bubbling and mixednuts (raisins,chopped cashewnuts,sliced almonds)
  8. Then after a minute mix the ghee to the carrot. Also add elaichi powder and mix it well.
  9. Cook till the milk is evaporated completely
  10. Also add mawa for garnishing. Grate masa and roast it for 2 to 3 minutes. Garnish mawa on the top while serving hot gajjar ka halwa. (This step can be skipped)
