A koeksister /ˈkʊksɪstə/ is a traditional Afrikaner confectionery made of fried dough infused in syrup or honey. It should not be confused with the similar sounding Cape Malay koe'sister, which is a fried ball of dough that's rolled in desiccated coconut. Rushda Achmat from the Black Olive shares her easy recipe for these traditional Cape Malay koeksisters. Steps to make Easy Koeksister heaven:
- In a large mixing bowl, sift the flour and baking powder as well as the chopped rosemary
- Use your fingertips to rub the smooth butter into the mixture until it has infused with the flour mixture.
- In a separate bowl, mix the egg, water and the milk.
- Pour the egg mixture into the flour mixture and mix then knead.
- On a floured surface. Roll out the dough and cut into 30 stips. Cut 1 piece into 3 stips to plait. Plait till end and pinch so that the koeksister doesn't unwind.
- In a deep frying pan. Heat the oil to 180°C. Add the koeksisters and fry until golden for about 2 mins each. Using a slotted spoon.
- Remove the koeksisters and add them to a bowl of golden maple syrup infused with cinnamon.
- Refrigerate for at least 30 minutes.
