I've mentioned here before that I was experimenting with different gf flours with varying results.

- Measure and add all the flours in a bowl: Sorghum flour, corn flour and wheat flour
- Add in your spices, salt and sugar and give it a mix.
- Make a well at the center and pour in your melted butter and milk. Add in water, a little at a time until the batter has a dropping consistency.
- Fold in your chopped onions, rosemary and tomatoes. In a pan add some oil and add a ladleful of batter. Swirl the pan to distribute the batter. Your pancakes don't have to be perfectly circular as the sorghum flour is usually heavy.
- Fry the pancakes on both sides until they are perfectly cooked. Serve with ketchup and enjoy.
