The ingredients needed to make KAIRAS/ RAW MANGO SWEET PICKLE:
- Take 1 cup raw mango chopped
- Get 1/2 cup jaggery
- Get 2 tbsp oil
- Get 1 tsp coarse methi/ fenugreek powder
- Get 2 tsp red chilly powder
- Take 1/2 tsp mustard seeds
- Take 1/4 tsp hing
- Take 1/4 tsp turmeric
- Make ready 1/4 cup water
- Get to taste salt
METHOD: Wash, peel and cut the mangoes into half-inch pieces. Mix in the salt and turmeric and set aside for one hour in a stainless steel vessel. Squeeze out the water from the mango, add jaggery, and place the vessel on the fire. Cooked raw mango pieces simmered in a sweet and spicy coconut sauce.
Steps to make KAIRAS/ RAW MANGO SWEET PICKLE:
- Heat a pan. Add oil, when heated add mustard seeds. Let them crackle
- Add hing, turmeric powder and the chopped raw mango. Cover and cook for 2 minutes.
- Add 1/2 cup of water and let it cook further until mango is soft.
- Add jaggery, red chilly powder, roasted methi powder and salt to taste. Cook this for another 2-3 minutes. Make sure the jaggery is dissolved.
- This is a tangy, delicious side dish that enhances your meals.
Squeeze out the water from the mango, add jaggery, and place the vessel on the fire. Cooked raw mango pieces simmered in a sweet and spicy coconut sauce.
