- Ingredients:
- Medium to large carrots..peeled and sliced slant shaped through the width first then sliced length wise into thinner slices about 3 times…then slice those into slanting shorter pieces(see pic)this is important due to ensure carrots absorb flavors while cooking and cook quicker to make them soft
- Prep the tomatoes: half them,devote and slice then chop as fine as possible
- Prince corriander in collander and let drain in there..then finally or roughly chop
- You can use long green chillies if you prefer.you start heating up your oil in pan.then can add 4 green chillies until they start popping…if not using green chillies you can go straight to adding choped tomatoes and spices.simmer until tomatoes broken down to more pasty consistancy
- Add carrots,vinegar and little water
- Simmer till carrots start softening.about 4 mins then add more oil.let carrots cook in a bit more until tender..taste for spice/salt can add as more as required.(optional you can add a bit of lime juice or lemon zest..gives this a gr8 flavor)
- Add the pickled pepper pieces then cover and simmer about 2 mins until you can see oil at edges and the mixture has a bit of sauce but not liquidy.add the coriander
- Put in your serving dish decorate with chillies and corriander and sliced lime..serve with favoured dishes..bismillah and enjoy!
