  2. Take Salt n Pepper

  5. Make ready 170 g unsmoked Cooked Pancetta
  6. Make ready Grate enough chedder cheese to have 6 heaped tsp in each muffin

Instructions to make Breakfast muffins:
  1. Whisk the eggs for a 1 minute add the milk and whisk. Next add the pancetta to a little olive oil and fry.
  2. Greace your muffin tray. Then pour the egg milk mix in each one. Leaving a quater inch gap at the top. Add salt n pepper to the egg mix. Next sponn in a little tsp pancetta in the egg.
  3. Next add a little onion.( do this while the oven gets hot 200C. Then dice tomatoes and add to each muffin. Then add the cheese
  4. You can add any Filling you like really. Cooked Sausage chopped up, Bacon, sweet peppers anything like that. Also they just fit on a Brioch Bun nicely.
  5. Add the muffin tray to to the oven and check after 10 minutes see if they are browned and solid. Use a large spoon to just lift the muffin out gently.
