Instructions to make Cheese Scones:
  1. Firstly, heat the oven to 200C. Into a large mixing bowl put the flour, bicarbonate of soda, salt, cream of tartare and butter (cut up in to 1 cm cubes). Rub the butter between yours thumbs and fingers to create a crumbly texture.
  2. Add 150g of the grated mature cheddar cheese and the milk and bring together with your hands.
  3. Trying not to play with the dough to much, press it so it is one inch thick. Using a cookie cutter cut out 12 circles.
  4. Cover all the scones in the remaining grated cheese and bake them for 12-15 minutes.
  5. Take the scones out and place on a wire rack.
  6. Top Tip💡: Serve with a roasted vegetable soup.

It's important not to over handle these scones, as they will be heavy and tough. Scones can be eaten hot, but not straight from the oven. Let them cool slightly, and they're also very good when served cold. These cheese scones are also a lovely substitute for or an addition to a light lunch, perhaps with a green salad or a bowl of potato leek soup, and perfect to pop in the lunch box.
