  4. Place into the preheated oven and cook for 40-50 minutes. A knife inserted should come out clean. Leave to cool slightly in the tin, then turn out and allow to cool completely on a cooling rack.

The next day, stir in the flour, spice and marmalade to the fruit mixture. Beat the egg well, and mix in. I love this cake spread with butter and a good cup of tea.
