- Make ready 1 litre Milk
- Take 1 bowl maida/All purpose flour
- Make ready 1 bowl Ghee
- Prepare 2 bowl Sugar
- Prepare 1 tsp Cardamom(Elaichi) powder
- Get pinch Saffron
- Prepare 2 tablespoon Sooji
- Get as needed Chopped mixed dry fruits (pistachios, almonds)
Malpua recipe is not as daunting as it seems. Malpua is an Indian sweet dish that is basically a sugar syrup soaked pancake prepared from a batter of flour, milk and cardamom. These pancakes are usually fried in ghee till crisp along the edges, soaked in sugar syrup, garnished with pistachios and served warm with a topping of Rabri aka rich thickened milk. Take them out from the ghee and put it into the sugar syrup.
Steps to make Rajasthani Rabri Malpua:
- Boil the milk consistently and boil till it reduces to half. Leave the milk(rabri) to be cool.
- Take the milk in a bowl and add a maida flour slowly and keeps it mixing. Mix them well and the batter should slightly thicker. Leave the batter for 15 minutes.
- For sugar syrup, add 2 cups of sugar then add water to cover the sugar quatity. Add cardamom powder and saffron and orange food colour(optional). Boil it until the syrup becomes thicker.
- For making malpua, take a pan, add 2 cups of ghee and heat it. Once ghee is hot, add the small amount of batter. It will automatically take a round shape. Take it out. Soak the oil.
- Add the malpua into the lukewarm syrup. Leave for 2 minutes.
- Take malpua out on a plate. Garnish and serve with fined chopped pistachio, almond and cherries.
