The ingredients needed to make Kimami Sevai:
  1. Take 1 cup Semiya (Vermicelli)
  2. Take 1/2 cup Khoya (Mawa)
  3. Make ready 1 cup Sugar
  4. Get 1 cup Milk
  5. Get 1-1/2 cup Water
  6. Take 2 Service Spoon Ghee
  7. Get 1 teaspoon Cardamom Powder
  8. Prepare 1/2 cup Mixed dry fruits, (almonds,cashews, raisins,Green pista)
  9. Prepare 2 tablespoons Dry coconut
  10. Get Pinch Food Color (orange) (optional)
Instructions to make Kimami Sevai:
  1. Heat a pan/wok on a slow flame and roast dry Sewai till it turns dark brown. Keep it aside. Make sure to avoid over-roasting.
  2. In the same pan, heat ghee and fry some of dry fruits (Some we add at the last). Lastly, add coconut as it burns quickly, be very careful. Fry altogether and keep aside.
  3. In a deep pan, add sugar, khoya, milk, water and mix it well. Put it on the flame and keep stirring till the first boil. Slow down the flame to cook the sugar syrup till it gets thicker and you feel heavy while stirring. - - Add 1/2 cup water or milk to the thick syrup and give another boil.
  4. Sprinkle green cardamom powder and mix well.
  5. Add roasted Sewai, dry fruits and cook on a slow flame for about 4-5 minutes and switch off.
  6. Take it out and serve with dry fruits. Serve Kimami Sewai
  7. Cover the lid and leave for 10 minutes.Now to make it more delicious & fancy look sprinkle some dry fruits and khoya on top.
