  3. Meanwhile, grate the carrot and courgette. Once the meat is ready, remove the tray from the oven, give everything a good mix around and the lay the grated vegetables over the top. Place the tray back in the oven for another 10mins.
  4. Peel and grate the garlic and ginger. Heat a wide based pan over a medium heat with a drizzle of vegetable oil. Once hot, add the ginger and garlic, cook for around 2-3mins or until fragrant. Boil a kettle of water.
  5. Crumble the stock cube into the pan and then add the tomato puree, soy sauce and 150ml boiled water. Add the meat and vegetables from the tray, give everything a good mix and then cook until the sauce is reduced and resembles a ragu like consistency.
  6. Serve in the leaves of the lettuce.

If using chicken or pork, add cornstarch, toss, then add marinade and combine. For meat, marinate in the fridge for a little bit. Add the sliced pork and toss to coat.
