- Preheat oven to 180 degrees C. In a large bowl, mix together the oats, all of the nuts, sunflower seeds, pumpkin seeds, cinnamon and salt together with the zest and coconut.
- Melt the coconut oil until liquid, add the juice of the citrus, maple syrup, stir to combine. Add this mixture to the dry ingredients in the first step. Mix until all ingredients are incorporated.
- Line a baking tray with parchment paper, place the granola mixture on the lined tray, spread the granola evenly. Bake for 5-10 minutes until golden. Leave to cool then store in airtight containers.
- Serve with double cream plain yoghurt and fresh fruit.

Virgin coconut oil has many healthy properties and enhances the taste of the granola, but if that cannot be found you can substitute it with any other Nice crunchy clumps of granola great flavour. I used sunflower seeds due to a nut allergy and used agave and brown rice syrup instead of sugar. You'll never buy store bought again!
