- Wash and soak tuvar dal, yellow moong dal and urad dal together in water for 30 minutes. Then boil in pressure cooker with enough water.
- In a pan heat ghee. Add cumin seeds, green cardamom and cloves. Then add chopped onion, chopped green chillies and crushed garlic cloves. Saute till onion turns translucent. Add salt, turmeric powder, red chilli powder, garam masala powder and mix well.
- Add cooked dal and mix well. Now switch off the flame. Add milk, fresh cream and beaten curd. Mix well. Switch on the flame. Add chopped mint leaves, cover with lid and cook for 4-5 minutes. Switch off the flame.
- Now heat a piece of coal and put it in the steel katori. Place this katori at the centre of the dal. Pour 1-2 teaspoon ghee over it and cover the lid immediately. Rest for 5-7 minutes. Then remove katori from dal. Rich and delicious Sultani dal is ready to serve. Serve with parotha or steam rice.
