- After a minute rinse under cold water… then fill the bowl with cold water…
- Peal the onions if you need a knife use stainless steel so they don’t go brown
- Cover the onions in salt to drive out some of the moisture that can dilute the vinegar I left them like this overnight in the fridge
- Wash the jar and then dry out in the oven for 15 mins at 120 Degrees
- Fill the jar with onions and cover with the vinegar
- Put in the dark cupboard for at least a few weeks, ideally till Xmas 🎄
