Once all bitter gourd are sliced, wash the bitter gourd slices in saltish water and squeeze out the water. This is done to remove the bitterness. If you squeeze water properly, you are removing most of the bitter taste. But I would say, that is part of the nutrients of this vegetable although we do not like.
Steps to make Bitter gourd curry with tamarind:
- Marinate the bitter gourd with turmeric powder and salt. Keep aside for five minutes.
- Add Refined oil. Once the oil is hot. Add mustard seeds and 1 dry red chilli. Let it crackle. Then add onion. Fry till it become light brown in colour. Then add bitter gourd. Saute it for a few minutes. Add all the dry masala powder. Fry it till the massla cooked well. Then add bitter gourd.
- Mix it well. Add salt again mix it. Add little water as needed. Cover and cook till the bitter gourd become tender. At last add tamarind pulp. Mix it and cook for few minutes till it becomes gravy.
- Once it is done. Transfer to a beautiful serving plate. Garnish with coriander leaves and green chilli.
- Ready to serve with Hot Chapati and Hot Steam Rice.
